Banana Bread Overnight Oats

I can’t believe it’s taken me until now to try overnight oats considering I eat oatmeal pretty much every morning. It’s perfect for anyone on-the-go and takes a few minutes to prepare. I usually make a big batch at the start of the week that lasts 3-4 days, but it can be kept in the fridge for up to 5 days. I’m a huge fan of banana bread but it’s not particularly a healthy breakfast option, so I’ve found this a great alternative.

1 medium banana
1/3 cup rolled oats (my favourite)
1/2 cup unsweetened almond milk
1 tablespoon chia seeds
1/2 teaspoon ground cinnamon
Sweetener eg organic maple syrup, rice malt syrup, honey (I usually skip the sweetener since the bananas & dates give it enough sweetness)
Optional: walnuts/almonds, dates (I use 1-2 pitted dates and break it into small pieces) & blueberries

Mash half of the banana in a jar, container, or bowl. Next, add the oats, yogurt, milk, chia seeds, cinnamon and stir to combine. Refrigerate overnight. The next morning, top with walnuts, dates & any additional toppings, as well as the remaining 1/2 banana.

  • I go through big overnight oat phases where it’s all I eat for breakfast for months! So good. I love using chia seeds to gel the mixture together (though yogurt would serve a similar function).

    • I think I’m in one of those phases right now haha. Yes! I feel like it’s not the same without one of them :) x

  • Poshnessary

Sounds amazing! we always only did milk + oats + sweetener – just because its super low in calorie. your recipe sounds amazing! Great idea with the chia seeds.

    • Adding a tablespoon or two of low-fat greek yogurt (I use Chobani) adds hardly any calories, but elevates the texture & taste :) Definitely give it a try! x

      • Poshnessary

your so right – actually super low. I defiantly will xoxo

  • That looks delicious, great Autumn recipe! Will have to give it a try.
