I don’t tend to make many smoothies during the Winter, but I came across this recipe and I mean, is there really a better combination of flavours? It keeps me full for so long and it’s perfect for breakfast on the go. You could even throw in some vanilla protein powder and serve it as a post-workout treat!
Coconut, Vanilla & Almond Butter smoothie
1 cup coconut milk (I like organic light)
¼ cup almond butter
10 small dates
1 tsp vanilla paste, (or vanilla extract)
2 cups ice
Sweet Leaf Stevia Vanilla Creme, to taste
Optional: Desiccated coconut for garnish
Optional: Vanilla Protein Powder
1. Add all ingredients except ice to blender. Puree well.
2. Add ice and blend until ice is all crushed and smoothie is well blended and smooth.
3. Pour into two glasses and serve immediately.
