I never used to be a Breakfast person up until the past few months, now I could pretty much eat Breakfast for every meal. Of course, a lot of my favourite Breakfast meals take time – like French toast, waffles and pancakes. I came across this recipe for grab-and-go Pancake muffins, and could not resist making them as pancakes are a weakness of mine. They turned out delicious, and are relatively healthy. They’re made primarily of Almond flour, and I switched the maple syrup for rice malt syrup as a healthier alternative. They make a perfect morning/afternoon tea snack as well. However, if you’re looking for a Pancake muffin recipe that more closely resembles pancakes, I’d give this one a go. Happy baking!
